Manuka Honey Chocolate Cake

Ingredients:

Cake:
125 g dark chocolate chopped
140 g butter cut into cubes
4 extra large eggs
1/3 cup Manuka Honey MGO 30
¾ Cup Milk
1 cup Sugar
½ Cup Cocoa Powder
1 ½ Cups Plain flour
1 Tbsp baking powder
½ tsp bicarb soda

Whipped Ganache:
250 g dark chocolate
1/3 cup cream

Method:

  1. Preheat the oven to 180 C and grease a large springform pan.  Line the bottom with greaseproof paper.
  2. Melt the butter and chocolate in a saucepan over a medium heat. Take off the heat and add the eggs one at a time, whisking in between each addition. 
  3. Add the honey, milk and sugar, stir until combined.
  4. In a bowl sift the cocoa powder, baking powder and bicarb soda into the flour. Add the wet mix to the dry flour mix and stir through.
  5. Pour the batter into the pan and bake for 45-50 minutes.
  6. Remove from the oven and allow it to cool in the pan for 15-20 mins. Remove from the pan and cool on a wire rack.
  7. Make the ganache by melting the cream and the chocolate in a saucepan, stir until completely melted, allow it to cool to at least room temperature or place it in the fridge for 30 minutes.
  8. Whip the ganache with an electric mixer on high until it becomes lighter in colour with a beautifully aerated texture.
  9. Slice the cake into 3 layers and place the ganache between the layers and finish with a final layer on top.
