Ingredients:

75g Self Raising Flour
50g Semolina
100g Oats
2 tsp Mixed Spice
140g Butter
2 Tbsp Nature's Gold Manuka honey MGO 30
150g Caster Sugar

Method:

1.  In a saucepan, heat the honey, butter and caster sugar until dissolved and blended.
2.  In a large bowl, mix the flour, semolina, oats and mixed spice.  Add the melted butter and honey mixture into the dry ingredients and mix well until fully incorporated.  Place in the fridge for at least 20 minutes to cool.  Preheat oven to 160C.
3.  Roll small teaspoons of the cookie mixture into balls and place onto a lined baking tray with plenty of room between each ball. - Do not flatten as they will spread out a lot as they bake.  Bake in batches for 10-15 minutes.
4.  Biscuits will be soft when removed from the oven, leave them on the tray for 10 minutes before transferring to a wire rack to finish cooling.
