3/4 Cup Nature's Gold Manuka Honey MGO30
1 cup vegetable oil
1 tsp baking powder
1 tsp cinnamon
2 1/2 cups sifted plain flour
1 cup black coffee
1 cup softened cream cheese
1/2 cup softened butter
3-4 cups icing sugar
1 tsp vanilla essence
Mix all of the ingredients together. Bake at 180C for 40 minutes or until cake springs back when lightly pressed.
1. Beat the butter for 3 minutes in an electric mixer on medium setting.
2. Add the cream cheese, beat for 1 minute. Add the vanilla essence.
3. Gradually add the icing sugar, mixing at a low speed until combined, and then increase the speed until the frosting holds it's peaks. (The mixture will stiffen if placed in the fridge)
4. When the cake has totally cooled, cut in half or thirds and frost between the layers, re-assemble and completely frost the sides and top of the cake and decorate as you wish.
