1 cup Strawberries 3/4 Cup ice cubes 1 Cup Frozen/Fresh Dragon Fruit* 1/2 Cup Vodka 1/2 Cup Dragon Fruit Honey Syrup 1/2 Cup Soda Water
Syrup: 1. In a saucepan, bring 1/2 cup water and 1/2 cup Dragon fruit honey to the boil. Turn down heat and simmer for a couple of minutes until dissolved. Set aside to cool. 2. In a blender, place the strawberries, ice, dragon fruit, vodka, soda water and half of the syrup. Blend well until thoroughly combined with no chunks. 3. Taste, and if needed add more syrup to adjust the sweetness to your own personal taste. 4. Serve in a cocktail glass with a strawberry and garnish with fresh mint if desired.
*Fresh dragon fruit can be used. Dice into cubes and freeze ahead of time. I used the frozen pink dragon fruit which is sold in the freezer section of Coles. The pink dragon fruit gives the cocktail it's intense colour.
