1 banana split length-ways
A handful of blueberries
A couple of dollops of lemon or vanilla yoghurt

Lemon Crunch Crumble:
175g Digestive biscuits
3 Tbsp Brown Sugar
90g Melted butter
zest of 1 lemon
1. Crush the biscuits until they become a course crumb.
2. Mix the biscuits with the melted butter, sugar and lemon zest.
3. Spread the crumb mixture evenly onto a lined baking sheet and place in a pre-heated oven at 180C for 15 minutes or until just golden and crunchy. Allow to cool and store in an airtight container.
4. Assemble the banana and fruit into the dish, dollop with yoghurt and sprinkle the crumb mixture over the top.
5. Drizzle with honey.
